Recipe: Cinnamon Snack Mix

This is a favorite in our house with the kids and adults. Not only is it easy to make and short on ingredients, but it is sugar-free and lowfat! We often make a batch or two to take when traveling or as a fun family night treat!

CINNAMON SNACK MIX

4 cups Chex (any variety; we like 2 cups Wheat and 2 cups Corn Chex)
1-2 cups Pretzels (small shapes work best)
1/3 cup Honey
1 Tbsp. Canola oil
Cinnamon, to taste

Mix honey and oil thoroughly. Add cinnamon according to taste (I usually add 1-2 Tbsp). Mix honey combination gently with cereal in a large microwaveable bowl. Microwave 1 minute, then stir. Microwave for 3 or 4 more 45 second increments, stirring well to coat in between (and being careful not to burn!). Spread on a wax paper lined cookie sheet to cool; sprinkle with additional cinnamon and sugar if desired. Enjoy!
