Just a note on whole NY strips @ Nino-
A while back Kroger had whole pork loins on sale, cut free (the big vacuum pack) and I loved the value of that deal. Pretty much all meat and little to no waste. So when Nino had a sale on whole NY, I thought it would be roughly the same thing as the pork- mostly steaks, not much waste. It’s not as good of a deal as it may sound. Nino’s keeps the vacuum-packs in the back so you can’t really inspect what you’re selecting. I’m sure they would let you take a closer look, but those things are pretty unwieldly. You pay for the whole NY as packaged, before it is trimmed and cut. They did not explain to me before they cut it up that there would be a good deal of waste. I ended up with a total amout of meat that was I think about 20% to 25% lighter than what I paid for. A couple pounds of that was burger, to “make up” for the trimmings. I was a bit fumed over that, since if the trimmings had enough meat to compensate for by giving me burger, wouldn’t it be feasable that the stuff too small for steaks might make nice stew or fajita meat?
My mother in law used to work for a butcher shop, and se said for that cut the amount of total loss I got was reasonable. But Nino posts nothing about the loss and the burger to make up for the trimmings. I was tempted to just leave the whole pack of meat there. In the end it was ok but IMHO not worth it given the final cost per useable steak, and the fact that I am basically buying it blind, meaning I can’t see how well the marbelling is.
